  • 1 tsp Dijon mustard
  • ½ tsp Cajun seasoning
  • ½ tsp hot sauce (optional)
  • 1 tsp lemon juice
  • Salt and black pepper to taste
  • ½ cup all-purpose flour
  • 1 large egg (for dredging)
  • 1 tbsp milk
  • ½ cup breadcrumbs (Panko or regular)
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Vegetable oil for frying
  • Chopped fresh parsley
  • Extra Cajun seasoning for dusting
  • Hot sauce drizzle

Instructions

  1. 1. Boil the eggs: Place eggs in a saucepan covered with cold water. Bring to a boil, cover, and turn off heat; let sit for 10–12 minutes. Cool in an ice bath.
  2. 2. Prepare the filling: Peel and halve the eggs, removing yolks into a bowl. Mash yolks and mix with mayonnaise, mustard, Cajun seasoning, lemon juice, salt, and pepper until smooth.
  3. 3. Set up for dredging: Prepare bowls of seasoned flour, beaten egg mixed with milk, and seasoned breadcrumbs.
  4. 4. Bread the egg whites: Dredge each white half in flour, dip in egg wash, then coat with breadcrumbs.
  5. 5. Fry the egg whites: Heat oil to 350°F (175°C) and fry breaded egg whites until golden brown. Drain on paper towels.
  6. 6. Assemble and serve: Pipe or spoon the filling into crispy egg whites and garnish with extra Cajun seasoning or chopped parsley.
