  • 2 packages (6 ounces each) Driscoll's raspberries
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup orange juice
  • 2 slices sourdough or French bread
  • 2 tablespoons mayonnaise
  • 2 ounces Brie cheese (about 4 tablespoons), at room temperature
  • 4 slices manchego cheese, white cheddar cheese, or provolone cheese
  • Additional raspberries for garnish

Instructions

  1. In a small saucepan, combine raspberries, sugar, vanilla extract, and orange juice. Cook over medium heat until boiling, then reduce and simmer for 15-20 minutes until thickened into a jam-like consistency. Let cool.
  2. Spread mayonnaise on one side of each slice of bread. On the unbuttered side of one slice, spread 2–4 tablespoons of raspberry compote. Layer with Brie and sliced cheese before topping with the other slice of bread.
  3. Heat a non-stick skillet over medium heat and grill the sandwich until golden brown on both sides and the cheese is melted (about 3–5 minutes per side).
  4. Serve warm with additional raspberries on the side.
