  • 3/4 cups cold unsalted butter cut into pieces (1 1/2 sticks or 12 tablespoons)
  • 1 large egg white lightly beaten
  • 3 large eggs
  • 1 can Baker’s Corner 100% Pure Canned Pumpkin (15 ounces)
  • 1/4 cup sour cream
  • 2 tablespoons apple juice
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1/8 teaspoon ground allspice
  • 3/4 cup Specially Selected 100% Pure Maple Syrup
  • 1 cup heavy cream
  • 3 tablespoons Baker’s Corner Granulated Sugar

Instructions

  1. Prepare the crust by mixing flour, sugar, and salt in a bowl. Cut in cold butter until crumbly. Stir in beaten egg, vinegar, and cold water until dough forms. Chill for 30 minutes.
  2. Preheat oven to 375°F (190°C). Roll out the chilled dough and place it in a pie dish.
  3. For the filling, whisk together eggs, pumpkin puree, sour cream, apple juice, vanilla extract, maple syrup, and spices until smooth. Pour into the crust.
  4. Bake for about 70 minutes or until set. Allow cooling before serving.
  5. Make whipped cream by beating heavy cream and sugar until soft peaks form. Serve alongside each slice.
