  • 1 cup softened butter
  • 1 cup packed light brown sugar
  • ½ cup white sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 ¼ cups flour + 2 tbsp (divided)
  • ½ tsp baking soda
  • 1 tsp salt
  • 3 cups quick oats
  • 1 cup white chocolate chips
  • 1 cup blackberries (quartered)

Instructions

  1. Preheat your oven to 325°F (163°C). Cream together softened butter, light brown sugar, and white sugar until smooth. Beat in eggs one at a time, then add vanilla.
  2. In another bowl, mix 1 ¼ cups flour, baking soda, and salt. Gradually combine with the creamed mixture. Fold in oats and white chocolate chips.
  3. Coat quartered blackberries with remaining flour before gently folding them into the dough.
  4. Using a cookie scoop, place portions of dough on a greased baking sheet. Bake for about 12-13 minutes until lightly golden.
  5. Allow cookies to cool on the sheet for 5-7 minutes before transferring to a wire rack.
