  • 1 1/2 tablespoons water
  • Sugar (to taste)
  • 6 oz cream cheese
  • 4 tablespoons milk
  • 2 tablespoons fresh lime juice

  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup powdered sugar

Instructions

  1. In a medium saucepan, combine blackberries and water. Cook over medium heat for 10-15 minutes until soft. Sweeten with sugar if needed.
  2. Transfer the mixture to a blender and puree until smooth. Chill in the refrigerator for at least 30 minutes.
  3. In another bowl, beat cream cheese, milk, lime juice, vanilla extract, and powdered sugar until smooth.
  4. Layer blackberry puree and cheesecake mixture into popsicle molds. Insert sticks and freeze until solid (about 4-6 hours).
  5. To serve, run hot water over the molds if necessary to release popsicles.
