  • 2 cloves garlic, minced
  • 1/2 cup soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper, diced
  • 1/4 cup green onions, chopped
  • Sesame seeds, for garnish
  • Crushed red pepper, optional

Instructions

  1. Heat oil in a large pan over medium heat.
  2. Add the chicken, cooking for 6 to 8 minutes until golden brown; remove from the pan.
  3. Sauté minced garlic in the same pan for about 30 seconds.
  4. Stir in soy sauce, pineapple juice, honey (or brown sugar), and vinegar; simmer for 2 minutes.
  5. Whisk cornstarch with water until smooth and stir into the sauce; simmer until thickened.
  6. Return chicken to the pan along with pineapple chunks and diced bell pepper; cook for an additional 3 to 4 minutes.
  7. Mix in cooked rice until heated through; garnish with green onions and sesame seeds.
