  • 1 tablespoon instant yeast
  • 1 cup warm whole milk
  • 2 tablespoons unsalted butter (softened)
  • 1 1/4 cups chilled unsalted butter (for laminating)
  • 1 cup high-quality dark or semi-sweet chocolate bars or sticks
  • Optional: 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, mix the flour, sugar, salt, and yeast together. Add warm milk and softened butter. Knead until smooth and elastic for about 8 minutes. Shape into a rectangle, cover with plastic wrap, and refrigerate for 30 minutes.
  2. Place chilled butter between parchment paper and flatten into a rectangle about half an inch thick. Chill if necessary.
  3. Roll out the dough into a rectangle twice the size of the butter block. Place the butter on one half, fold over, seal edges, and perform three to four folds with chilling in between.
  4. Roll laminated dough into a rectangle (12×18 inches) and cut into rectangles (3×6 inches). Place chocolate at one end and roll tightly.
  5. Let croissants rise on a parchment-lined baking sheet for 1–2 hours until slightly puffy.
  6. Preheat oven to 400°F (200°C). Brush croissants with egg wash (whisked egg and milk) before baking for 18–20 minutes until golden brown.
