Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1.5 pounds)
  • 2 cloves fresh garlic, minced
  • 8 large flour tortillas
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 2 cups low-sodium chicken broth
  • 1 cup sour cream
  • 1 can (4 oz) diced green chiles

Instructions

  1. Preheat oven to 350°F (175°C). Lightly spray a 9×13 inch baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, add a splash of chicken broth. Cook seasoned chicken breasts until no longer pink (6-7 minutes per side). Shred the chicken with two forks.
  3. In the same skillet, combine remaining chicken broth, sour cream, and green chiles over medium-low heat until heated through; do not boil.
  4. Lay tortillas on a clean surface. Fill each tortilla with shredded chicken and drizzle white sauce on top before rolling tightly.
  5. Place rolled tortillas seam-side down in the baking dish. Pour remaining white sauce over the top and sprinkle cheese generously.
  6. Bake for 25-30 minutes until cheese is bubbly and golden brown. Serve hot.
