Ingredients

Scale
  • ½ cup unsalted butter, melted
  • 1 cup light brown sugar
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 1 ½2 teaspoons cinnamon
  • ¼ teaspoon salt
  • 1 cup flour
  • ½ cup mashed banana
  • ¼ cup butter (for frosting)
  • 6 tablespoons light brown sugar (for frosting)
  • 2 tablespoons milk (for frosting)
  • Dash of salt (for frosting)
  • 1 teaspoon vanilla (for frosting)
  • 1 cup powdered sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8 x 8 inch baking pan with aluminum foil, spraying it lightly with cooking spray.
  2. In a medium bowl, mix melted butter, light brown sugar, and salt until combined. Stir in the egg, vanilla, and cinnamon, then add mashed banana.
  3. Gradually incorporate flour until smooth. Pour the batter into the prepared pan and smooth the top.
  4. Bake for 25–30 minutes or until set in the center. Cool completely before frosting.
  5. For the frosting, melt butter in a saucepan until amber-colored; stir in brown sugar, milk, and salt, bringing it to a boil before removing from heat. Once cooled slightly, whisk in vanilla and powdered sugar until smooth.
  6. Spread frosting over cooled blondies and let it firm up before slicing into squares.
