  • 3 medium ripe bananas

  • ¼ cup softened butter for frosting
  • 4 ounces softened cream cheese
  • 2 ¼ cups powdered sugar
  • 1 teaspoon vanilla extract for frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 15 x 10 x 1 inch baking pan with non-stick spray.
  2. In a stand mixer, cream the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Mash the ripe bananas and mix in with the vanilla extract.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually add this mixture to the creamed mixture until just combined.
  4. Pour the batter into the prepared pan and bake for about 25 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely.
  5. For the frosting, beat together softened butter and cream cheese until smooth. Gradually add powdered sugar along with vanilla extract until creamy.
  6. Once cooled, spread the cream cheese frosting evenly over the banana bars.
