  • 2 cups all-purpose flour
  • ¾ cup all-purpose flour (for crumble)
  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • ½ cup unsalted butter (room temperature)
  • 2 large eggs
  • 1½ cups diced apples (Granny Smith or Honeycrisp)
  • Optional: Ground nutmeg and sour cream or Greek yogurt

Instructions

  1. Preheat your oven to 400°F. Line a muffin tin with paper liners.
  2. For the crumble topping, mix together ¾ cup flour, ¼ cup brown sugar, 2 tablespoons granulated sugar, and cinnamon in a bowl. Add melted butter until clumps form; set aside.
  3. In another bowl, whisk together the remaining dry ingredients: flour, cinnamon, nutmeg (if using), baking powder, and salt.
  4. In a large bowl, cream together brown sugar, granulated sugar, and butter until fluffy. Add eggs, sour cream or Greek yogurt, and vanilla; mix until smooth.
  5. Gradually add half of the dry mixture followed by milk; stir until just combined. Gently fold in diced apples.
  6. Fill muffin cups three-quarters full with batter and sprinkle crumble on top.
  7. Bake for about 20 minutes or until a toothpick comes out clean.
