  • ½ cup packed light brown sugar
  • ¼ cup granulated sugar
  • ½ cup unsalted butter (room temperature)
  • ¼ cup sour cream (or Greek yogurt)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. In a bowl, mix together flour, brown sugar, granulated sugar, and cinnamon for the crumble topping; add melted butter and stir until clumps form.
  3. In another bowl, whisk together flour, baking powder, salt, and cinnamon.
  4. In a large bowl, beat butter with sugars until fluffy; add eggs one at a time along with sour cream and vanilla until combined.
