  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1¾ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar for topping
  • 1 teaspoon ground cinnamon for topping

Instructions

  1. Preheat the oven to 350°F and prepare a 9” square baking dish with butter and parchment paper.
  2. In a large pan, boil the apple cider until reduced by half (about 5 minutes). Whisk in diced butter until melted.
  3. In a medium bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, and spices until smooth.
  4. Slowly combine the reduced cider mixture with the wet ingredients.
  5. Gently fold in flour until just combined.
  6. Pour batter into the prepared dish and bake for 22–25 minutes or until golden brown and set.
  7. Cool on a rack for about 5 minutes before brushing melted butter on top and sprinkling with cinnamon sugar.
