  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla extract
  • 1 3/4 cups (218 g) all-purpose flour, spooned and leveled
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 6 oz (170 g) cream cheese, cold
  • 3 tbsp (38 g) granulated white sugar
  • 1/2 tsp vanilla (for filling)
  • 12 tbsp (1428 g) salted butter, melted (for topping)
  • 1/4 cup (50 g) granulated white sugar (for topping)
  • 1/4 tsp ground cinnamon (for topping)
  • 1/8 tsp ground nutmeg (for topping)
  • pinch ground allspice (for topping)

Instructions

  1. Reduce 2 cups of apple cider in a saucepan over medium heat until it thickens to about 1 cup.
  2. For the cheesecake filling, blend cold cream cheese with granulated sugar and vanilla until smooth; refrigerate.
  3. In a separate bowl, mix flour, cinnamon, nutmeg, allspice, baking powder, baking soda, and salt.
  4. Cream softened butter with both sugars until fluffy. Add egg yolks and vanilla, then mix in reduced apple cider.
  5. Gradually add dry ingredients to wet ingredients; mix until just combined.
  6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Scoop cookie dough onto the sheet, press in cheesecake filling, cover with more dough.
  8. Bake for about 11 minutes until edges are golden; cool slightly before brushing with melted butter and sprinkling spiced sugar on top.
