  • ½ cup granulated sugar
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 2¼ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup apple butter
  • ¼ cup granulated sugar (for rolling)
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. In a mixer, cream together the room-temperature butter and sugar until fluffy. Add egg yolks and vanilla, mixing until well blended.
  3. In a separate bowl, combine flour and salt, then gradually add to the creamed mixture until just combined.
  4. Chill the dough for 30 minutes in the refrigerator.
  5. Roll dough into balls, then roll each in the cinnamon-sugar mixture. Place on baking sheets and create an indent in the center of each with your thumb; fill with apple butter.
  6. Bake for 12-14 minutes until golden around the edges. Cool on wire racks before serving.
